Back in February, my niece turned ONE. Yes, ONE, already! Her mama planned a fabulous rainbow party (I wish I had more pictures to share) and ... I finally had an excuse to make a rainbow cake. Syd knew for a while that Carrie's party would be rainbow-themed and had planned out every last detail (again, wish I had more pics). She wanted a brightly-colored rainbow cake, with a little dash of pink, disguised by a simple/rustic white frosting and some rainbow sprinkles/jimmies. Every little girl needs a little drama at her birthday party, right?
I was surprised how quickly I was able to make this cake -- one benefit of making thin layers, they cool in no time! I definitely see myself making another rainbow cake (or maybe a purple and gold cake for game day?), but next time I might ice the top but leave the sides exposed. The reveal is fun, but I think it really just hides the cake's beauty too long.
Best part of making birthday girl's cake ... watching her enjoy every morsel. At least the morsels that did not end up in her hair, or on her clothes, or on the floor, or stuck to her chair. Too bad Rigby wasn't around to catch her "leftovers." Then again, that is a pretty clean plate in front of her.
