Work has been so busy lately, and I am drained by the time I get home. Baking is something I like to do to de-stress (oddly enough spending lots of time in the kitchen actually gives me energy). I kinda wish it was mopping or cleaning windows that did that instead, but no, it is baking (or painting). Bad part is I'm usually left with a little bit of a mess ... luckily, a little mess does not stress me out.
I've been trying to cut back on the baking though. Turns out it isn't that great for the waistband. But sometimes I just gotta get my beaters dirty! So, I am always excited to have an actual reason to bake. And that is how these snickers cupcakes made their way into my life...
Mother's Day. My mom love snickers, so it seemed like a perfect time to try out a new recipe. One day I will get it together to post recipes -- or should I say recipes I've adapted/tweaked/combined. I like to know ahead of time what recipes work, and I'd like to pass along that information to other bakers. But I haven't taken the time to type all of that out just yet. There are lots of good snickers cupcake recipes out there already. I found two that were pretty similar, that also had good reviews, and then I made a few changes. Mainly, I like to use coffee instead of milk or water in my chocolate cake recipes. I also melted pieces of snickers in the caramel filling instead of filling them with caramel and a hard chunk of snickers. I think it made for a smoother filling that melted into the cake.
DISCLAIMER: These babies are very, very, VERY RICH! It is difficult to eat an entire cupcake, so it may take a while to finish off two dozen! Make these for a hungry, chocolate-loving crowd.
