A little over a month ago, a group of us gathered at my brother and sister-in-law's house for a special blend of fun ... the Kentucky Derby and Cinco de Mayo fell on the same day this year. We gathered to drink mint juleps (or in my case, mojitos in a mint julep glass), wear our derby hats, and pig out on mexican food. It made for good times.
I made two types of cupcakes, one for each of the occasions, and also decorated chocolate sugar cookies. To honor the Kentucky Derby, I made Kentucky Derby bourbon pie cupcakes with a bourbon swiss meringue buttercream. And for Cinco de Mayo, I made strawberry margarita cupcakes with tequila lime swiss meringue buttercream. The cookies were all cinco de mayo related, although I like to pretend the pinatas brought both worlds together. They were all so much fun to make and I am happy to say, they were enjoyed by all!
